Eggplant should be grown in fertile soil at a temperature of 20-28 ºC. It has a long growing season and is sensitive to transplanting. Sow in pots as seedlings and transplant into tunnels or open ground in the second half of May. Harvest the fruits before they are fully ripe, about a month after flowering. Delicious for baking in the oven or grilling with breadcrumbs.
