It is also called kitchen maid's sorrow, housewife's grief, winter asparagus, poor man's asparagus, or winter rod.
Scorzonera is a highly productive vegetable with high nutritional value, whose edible part consists of simple storage roots more than 30 cm long.
A black-brown skin covers the white, sweet, delicate flesh. After peeling and cooking, it tastes similar to asparagus, and young leaves can be consumed as lettuce.
Sow in March-April in a seedbed or directly in the ground in May.
