Buckwheat honey – authentic taste
This type of honey is produced when bees collect nectar mainly from buckwheat, known for its delicate white flowers. The collected nectar (also known as unripe honey) is carried by the bees to the hive, where they place it in the honeycombs and seal it with wax, protecting it from moisture, contaminants and bacteria. The buckwheat honey then ripens – thanks to bee enzymes, disaccharides (sucrose) are converted into simple sugars, and the honey develops bacteriostatic properties and thickens.
Uses for buckwheat honey
Buckwheat honey has a rich, complex flavour, making it a welcome addition to the kitchen. You can use it like any other honey, for example on a pancake, slice of bread or cracker, or mixed into warm milk. It is also an excellent addition to sauces, such as barbecue sauce. Many people also use buckwheat honey to marinate meat – chicken, pork and beef. Especially if you want to give a dish a spicy flavour, you can give it a boost with buckwheat honey.
Remember that buckwheat honey is very distinctive, and its flavour is therefore more noticeable in dishes than that of any other honey.
Colour and storage
Buckwheat honey can come in many shades. However, these are always shades of brown. It all depends on the amount of buckwheat nectar in the honey and on the conditions during the nectar-collecting period – whether the summer was dry or there was more rain than usual. All of this also affects the properties of the honey produced later. That is why it is sometimes light brown, and at other times almost black. Its flavour and aroma can also be more intense or only subtly noticeable.
Buckwheat honey, if it is natural and has not been overheated, crystallises relatively quickly. If stored in cooler conditions, it will crystallise within a few months. Once crystallised, its colour changes slightly – it usually becomes lighter than when liquid. Buckwheat honey is sold in a 1 kg glass jar. In principle, buckwheat honey does not have an expiry date, but the jar (and especially the lid) does limit the period for which the honey is properly protected from external conditions. That is why an expiry date is shown on our website.
A tip from ietsGezond.nl: To preserve buckwheat honey’s properties, never heat it above 40 degrees. If you sweeten tea or coffee with honey, wait for it to cool a little first, and only then add the honey.
